2007 Aventura (5-year cask aged, bottled in 2012)

2008 Aventura (6-year cask aged, bottled in 2014)

2008 Aventura (8-year cask aged, bottled in 2016) 

Aventura is made in the style of traditional Port from traditional grapes: Alvarelhão, Souzão, Tinta Cão, Tinta Roriz, Touriga Francesa, and Touriga Nacional. We destem the grapes and start them fermenting. Once the must has reached the final level of sweetness that we desire in the wine, we stop the fermentation by adding grape brandy that we have aged in new American oak barrels. Once the alcohol gets to about 17%, the yeast die, leaving unfermented grape sugars in the wine. The new wine is racked to barrels and aged, typically for years.

Silvaspoons Vineyard

Silvaspoons Vineyard is a 300+ acre vineyard in the Alta Mesa sub-AVA of Lodi AVA. Located near Galt, CA between Lodi and Sacramento, this vineyard sees some of the hottest and driest weather in California, perfect for ripening grapes that need heat to mature. Grower Ron Silva supplies us with the Portuguese varietals that make up our Port-style dessert wines and our Douro-style red blend, as well as Petite Sirah and from time-to-time, Barbera.
